Has the massive egg recall got you a little bit gun shy about shopping for eggs? Never fear! It’s a common misconception that eggs are a staple for cooking and baking. There are plenty of eggless ways to prepare your favorite meals and treats!
1. Apple Pie
Cutting the eggs doesn’t have to mean cutting out baked treats, and VegFamily definitely proves this point with a delicious egg free recipe for apple pie. If apple’s not your thing, you could always substitute different fillings. You can even make an egg free pumpkin pie, if that’s more your speed!
2. Chocolate Chip Cookies
Veg Web has a recipe for, hands down, the best chocolate chip cookies I’ve ever made. They’re quick, easy, and don’t call for any expensive egg replacers. The best part about their Happy Vegan Chocolate Chip Cookies is that it’s a versatile recipe, too! You can add nuts or dried fruit to make unique, delicious cookies.
3. Tofu Frittata
Looking for an eggless brunch dish that won’t leave you wanting? Vegetarian Times has an excellent recipe for a vegan frittata with zucchini and onions. If the vegan part isn’t important to you, you could even use regular mozzarella cheese instead of a vegan version like the recipe suggests.
4. Mini Broccoli Quiche
Mini quiche is great brunch food, and it works well as a meal on the go, too! Grab one on the way out the door, and you have a savory breakfast that you can enjoy at your desk. Here’s a recipe for egg free broccoli quiche.
5. Tofu Salad Sandwich
Craving some good old egg salad? With the right mix of seasonings, you can whip up a creamy tofu salad that’s egg free and great in a sandwich or served over greens.
6. Soft Pretzel
This soft pretzel recipe from Eco Karen has me drooling. How perfect for a movie night or a picnic! Soft pretzels often have an egg glaze to make them shiny, but this recipe proves that there’s no need!
7. Banana Bread
Banana is a great egg replacer in many baked goods, if the egg’s purpose is to add moisture. I’ve served this eggless banana bread to vegans, vegetarians, and omnivores and it always goes over swimmingly. It’s excellent for breakfast or as an afternoon snack.
8. Blueberry Muffins
These vegan blueberry muffins are another crowd pleaser. Baking soda and vinegar provide the leavening power that eggs would normally provide. Don’t worry, you can’t taste the vinegar in the final product.
